Our Small Grill Marked Panini is an authentic Italian-style white hinge sliced baguette enriched with extra virgin olive oil. Grill marks are applied to the top surface for the ‘just-grilled’ look.

Ingredients

Bread:

Sm Grill Marked Panini

Toppings:

10 chicken breasts
250 ml pesto sauce
40 slices smoked gouda cheese (4 per sandwich)
mayonnaise

Roasted Tomatoes:

900-1350 grams cherry tomatoes - halved
15ml olive oil
7.5ml balsamic vinegar
1 clove garlic - minced
15ml fresh chopped basil or 2.5ml dry basil
salt and pepper to taste

Pre-heat the oven to 200degrees
Arrange chicken breasts on a parchment lined baking sheet and drizzle with olive oil, salt and pepper. Bake for 15-20 min or until internal temp reaches 75degrees. Let rest for 5 minutes before cutting up into bite size pieces.
Turn the oven up to 230degrees
To prepare the roasted tomatoes, in a large bowl toss tomatoes with ingredients to covere, arrange on a baking sheet lined with parchment paper and roast for 10-20 minutes
Toss the chicken pieces with the pesto sauce
Toast the bread open face for approx 1 min
Spread mayo on the bread
Layer 4 slices of cheese, chicken and tomatoes onto the bread
